Caroleum is organic extra virgin olive oil. The name Caroleum derives from a combination of names of grandpa Carlo and a Latin word for oil oleum. It is produced of a mixture of 6 different olive sorts - buža, karbonera, istarska bjelica, leccino, pendolino, frantoio - and extracted exclusively by cold mechanical pressing in a renown olive mill. The procedure of production, harvest and processing control is administered by the official regulatory body authorised by the Ministry of Agriculture.

Freshly discovered archeological finds of a two-millennia-old Roman oil mill near the Caroleum olive grove witness the antique tradition of olive growing on-site. Linking antique tradition with modern quality standards, a small family olive grove planted by grandpa Carlo's hands in 2000, cultivated devotedly and investing years of labour and care, finally became the first certified organic olive plantation in Istria in 2005. The effort shortly paid off by winning numerous national and international awards, such as gold medals at Maslina (Split, Croatia) and Biol (Bari, Italy).

Besides reduced usage of heavy mechanisation, the olives protection system is based on natural products and herbs. Olive fruits are being harvested carefully to prevent the fruit from damaging, before manually removing leaves and stems. Scientific researches proved that consumption of organic extra virgin olive oil, rich in antioxidants and healthy monosaturated fatty acids, efficiently prevents many of the modern health disorders. Among others, it has particularly beneficial effect on preventing and curing heart, cardiovascular and brain disorders. Therefore, it's not hard to understand the millennia-old bond between humans and olives, perfectly depicted in the old Latin proverb: Olea prima omnium arborum est.
